Beech is a rather grand old wood that has some neat tricks up its sleeves. The first is that beech tends to give meat a nice golden colour - it really works well on white meats. Beech also burns really nice for a very long time (it makes the best firewood in our opinion). The taste is neutral and you can really try it with anything, but it especially loves more delicate meat.
