This Kansas City rub is the most universal of all BBQ rubs. Sweet rather than salty, flavourful rather than fiery, it contains Muscovado sugar in the style of a Memphis rub, and cayenne in the style of Texas, but considerably less of each. Kansas City is a melting pot of BBQ cooking – embracing smoky, savoury and sweet. To that sweetness we add onion, garlic, and two types of paprika for a balanced, savoury finish. Delicious with beef, pork and chicken.
